Bread Baking Day #83 was all about special flours, meaning other than rye, spelt and wheat. I am glad that some have accepted the challenge and baked breads. Emmer was clearly the most popular flour among the special flours. But also rice, corn, oats and more were used. Best you check all the posts of the participants yourself!
Stay tuned! Thema des nächsten Bread Baking Day wird nächste Woche bekannt gegeben! / Theme of next Bread Baking Day will be revealed next week!
von Manuela, famflue glutenfrei!
Glutenfreies Mehl bekommt man inzwischen glücklicherweise sogar in Supermärkten.

In Thailand it’s difficult to get special flours like Einkorn, Emmer etc. but rice flour is an option. Look at these amzing baguettes with rice flour!
von Job, PalwithnoovenP
Rice is not just rice! Job managed to bake lovely rolls with rice flour. Crisp exterior and a soft, light, fluffy interior. Love it!
von Deane, The Fresh Loaf
Third time’s the charm! This loaf is all about whole and sprouted grains.

No picture of the crumb, but I am sure it was perfect and I love the smiley face ropes. I need to try this soon, too.

Blicken?

It’s handy to have some special flour in the freezer. Also Judy tested for us which sweetener is the best.
