Third time’s a charm!
My first attempt of a beer glazed bread was a failure. The loaf developed quite a swelling during baking. I guess the proofing was too short. Plan B was okay – I made a Russian braid, a loaf I already posted before – just glazed it with egg white. Not really original for the 6th anniversary party of BBD. So I tried again with the beer glazing, and this time successfully. Yeah, third time’s a charm!

Beer glazed Potato-Beer-Bread

makes: 1 loaf
Tasty bread with a crunchy crust and fluffy crumb.
Zutaten
- 50 g whole wheat flour
- 450 g flour
- 120 g boiled mashed potato
- 10 g fresh yeast
- 130 g beer of your choice
- 150 g water
- 11 g salt
- 20 g beer
- 1 g fresh yeast
- 15 g flour
Beer glaze
Zubereitung
- Add all ingredients expect salt in the bowl of your mixer. Mix on low speed 1.5 (Bosch MUM 8) for 4 minutes, add salt and mix 6 minutes on speed 2 (Bosch MUM 8). Cover and let rise for 60-70 minutes. If necessary make one Stretch & Fold after 30 minutes.
- 30 Minutes before you shape the bread prepare the glaze by mixing well all the ingredients.
- Form bread into a round, spread the glaze and dust with a little flour and let rise for about 90 minutes or until the glaze gets cracks.
- Preheat and oven pan to 230 C. Bake loaf for 15 minutes, open oven door to release steam. Reduce heat to 200 C and bake for another 25-30 minutes or until it sounds hollow when the bottom is tapped. If the bread turns to dark cover with aluminum foil. Remove and cool on a wire rack.

Ob glazed oder nicht, das Brot sieht einfach toll aus. Super Krumme! Mhm…
Schöne Idee – Kartoffelbrot hatten wir schon und Bierbrot auch, aber noch nicht vereint :D
Ich verwende gerne dunkles oder Malzbier, das gibt einen tollen Geschmack.
