During our holiday on the Costa Brava the parents of Moto’s godfather invited us several times. They have several gigantic pine trees, thus we could harvest in addition of the tomatoes some pine nuts, too.
The white edible core grows in the pine cones. The cones are harvested by hand, which is on the 30 meter high trees very expensive and dangerous. Thereafter, the seeds are removed from the cones and then removed from the hard shell. A very tedious job, which probably explains the high price of pine nuts. Iaia told us that sometimes people access their plot without asking and steal pine cones. Unbelievable, isn’t it?
Moto loves Pasta with pesto alla Genovese, so he immediately went to work. Unfortunately, we left our Kinderkitchen-Set at home, but Moto found an appropriate tool in Iaia’s garage to open the shells of the pine nuts.
Shortly after he proudly walked into the kitchen with fresh basil and pine nuts. Together with Mama we prepared lunch:
Pesto alla Genevose
100 g basil leaves
20 g pine nuts
10 g walnuts
1 garlic clove pressed
1 dl olive oil
30 g grated Parmesan cheese
1 pinch of coarse sea salt
Pepper
Roast pine nuts in frying pan (don’t add oil!) and roast. Allow to cool.
Add basil leaves, pine nuts, walnuts, garlic, salt and pepper in a mixer and process for a few seconds until the basil is chopped
Add grated Parmesan cheese and olive oil and mix again.
The pesto is ready to serve.
Goes well with pasta (we prefer Penne or Spaghetti).
Try: The cookids like to spread a grilled slice of bread with this Pesto and top it with Mozzarella, mhhh …. heavenly good!
