You are good guesser! Second guess from Susan of Wild Yeast was right. With this 4 ingredients I made an Apricot Yogurt Ice Cream.

I love apricots, so I tested the following recipe. Before freezing it was delicious. After it was not creamy at all, it was more like sherbet but still yummy.

I’m thinking about an acquisition of an ice cream maker. Unfortunately my budget is saying no…

Apricot Yogurt Ice Cream Sherbet
makes about 1 liter

foodies riddle #5 - solution: Apricot Yogurt Ice Cream

250 g apricots, pitted and cut into small cubes
125 g sugar
300 g yogurt *
200 g whipped cream

* Perhaps it wasn’t creamy because I’didn’t used a creamy yogurt.

I cooked the apricots in my Hotpan. Add apricots and sugar in the Hotpan. Cover and cook at 3/4 of the full temperature until steam is released. Reduce the heat to the second lowest temperature and allow it to cook for 5 minutes more. Remove the Hotpan from heat and place in its insulating bowl for 15 minutes.

Puree apricots and let cool.

Mix apricot puree and yogurt fold in whipped cream. Let freeze at least for 4 hours.

  1. Yum, apricots! Even with an ice cream maker it’s not guarantee of creaminess — I’ve been struggling trying to make a creamy ice cream and definitely don’t have the hang of it yet!
