Awesome! This month we celebrate the 5th anniversary of Bread Baking Day. I am throwing a party and everybody is invited to bring a bread with beer.

Of course as host I’m participating too and baked some burger buns.

The inspiration for the buns I found on Lisa’s blog, she baked these buns for a previous BBD. I changed the recipe a bit. Obviously I used some beer. My choice was San Miguel a Spanish beer, which has amongst others a brewery next to the Malaga Airport.

But you know what, I learnt that Cerveza San Miguel has its root in the Philippines. ;-)

For kneading the dough I used my new KitchenAid, which I compared recently with my old Bosch MUM8.

I noticed the dough hook of the KA turns faster and so the dough doesn’t get the same consistency, especially if you knead a small quantity of dough. So this time I just used only speed 1 for kneading.

Golden Burger Buns with Bear

Golden Burger Buns with beer for the 5th anniversary of Bread Baking Day. The beer gives these buns a special taste.

Ingredients

  • 320 g flour
  • 10 g fresh yeast
  • 1 tb milk powder
  • 10 g softened butter
  • 1 tb sugar
  • 1/2 egg
  • 70 g beer
  • 70 g water
  • 6 g salt

Instructions

  1. Combine all ingredients of the dough and mix and knead them for about 8 minutes to make a soft, somewhat tacky dough.
  2. Place the dough in bowl or other container large enough to allow it to at least double in bulk, cover, and let it rise for 60 minutes, fold dough once after 30 minutes.
  3. Divide dough into 6 equal parts. Gently roll each into a ball, flatten them and arrange on baking sheet. Let buns rise in a warm place for 1 hours.
  4. Preheat oven to 180 C fan with rack in center.
  5. Beat remaining 1/2 egg with 1 ts water and brush on top of buns. Sprinkle with sesame and nigella seeds
  6. Bake, turning sheet halfway through baking, until tops are golden brown, about 15 minutes. Transfer to a rack to cool completely.

The beer gives a very light beery taste to the buns which corresponds very well with the nigella seed I sprinkled on the top before baking.

  1. Noch mehr Burger Buns… und die hier sind auch noch mit Bier, wie lecker!

    Ich überlege schon die ganze Zeit, was es dann am Sonntag zum Finale geben wird, und schätze, ich bleib doch bei Burgern hängen ;-)

  2. Schöne Buns! Lange kann ich bei all der Burger-Inspriation nicht mehr mit dem Nachziehen warten…

    Und oh, das Event geht nur bis zum 1.Juli – da muß ich mich sputen mit dem Posten!

    Sag mal, die, die der Herr Wohlfahrt so tiefenbegeistert angrinst, das bist doch du im blauen Kleid, oder :)?

  3. Liebe Zorra,

    auf meiner Suche nach einem Burgerbrötchenrezept fürs Wochenende bin ich u. a. auf dieses gestoßen. Die Menge ist ganz in meinem Sinne, und Bier im Brot geht immer. Ich frage mich jedoch, wo das Salz abgeblieben ist, es kommt doch sicher noch in Schritt 1 in den Teig, oder?

  4. Vielen Dank für die schnelle Antwort! Es sind nun doch erst mal die King Arthur Flour-Buns geworden, weil ich keine Zeit mehr hatte, Bier zu besorgen, und das dunkle Hefeweizen wohl eher nicht das richtige ist. Aber nächstes Mal werden es diese hier, und ich bin schon ganz gespannt.
