It’s the first time I’m participating in Hay Hay It’s Donna Day. Peabody from Culinary Concoctions won the last event, so she is hosting HHDD #10. The theme she has chosen is one I couldn’t resist: Cheesecake.
I had some canned cherries from my birthday cake left. A good opportunity to use them. I thought Amaretto and cherries are a nice pair.
Here is the delicious result of this combination:
Cherry-Amaretto-Cheesecake
Base
150 g Willisauer-Ringli (or other cookies/biscuits)
60 g butter, melted
Filling
100 g Philadelphia light
200 g Quark
1 egg
75 g sugar
1 tb Maizena
vanilla sugar
1-2 tb Amaretto
6 drops bitter almond flavor
150 g canned cherries, drained
To make the base, process the Willisauer-Ringli in a food processor until crushed. Add butter and process until combined. Grease a 18 cm spring form. Press the Willisauer-Ringli mixture over the base and border (about 2 cm) and refrigerate.
Preheat oven to 160C.
To make the filling, beat egg yolk, vanilla sugar and sugar until creamy. Stir in Philadelphia and Quark and mix until smooth. Add Maizena, Amaretto, almond flavor. Fold in stiffly beaten egg white. Pour 1/3 of the cream cheese mixture over the base, spread cherries, pour rest of the filling and bake for 55 minutes in the middle of the preheated oven. Turn off oven, open the oven-door just a little bit and let rest for 30 minutes. Refrigerate until cold.
Before serving dust with icing sugar.

zu den Willi-Sauer-Ringli: ich kenn die nicht, sind die eher süss oder sauerlicher? Oder womit lassen sich die am besten vergleichen/ersetzen?

Willisauer-Ringli sind „steinhart“ und deshalb eigentlich nicht so gut für den „Teig“ geeignet, da sie die Butter nicht so gut aufnehmen können. Aber ich finde geschmacklich (sie enthalten unter anderem Honig, Zitronenschale, kandierte Orangen) passen sie gut zu den Kirschen.
Ich habe jetzt alle aufgebraucht, für den nächsten Kuchen werde ich ganz „normale “ Kekse verwenden.
