I love Muffins, so it’s a must for me to participate. For the event I brought together caramel and walnuts, a tasty pair.
Caramel Walnut Muffin
makes 12
Caramel milk
150 ml hot milk
75 g sugar
Batter
250 g flour
75 g sugar
2 ts baking powder
1 pinch of salt
4 ts vanilla sugar
caramel milk (see above)
2 eggs
125 g melted butter
150 g walnuts
Decoration
Icing sugar
some walnuts
Caramel milk: Melt sugar until lightly brown extinguish with hot milk, leave to cook at low heat for about 2 minutes. I used cold milk. This was not a good idea, the sugar sticks and you need to melt it much longer.
Preheat oven to 200 C.
Grease twelve muffin-pan cups or line with paper baking liners.
Stir together flour, sugar, vanilla sugar, baking powder, and salt. In another bowl, with wire whisk or fork, mix together melted butter, eggs and caramel milk. Mix the flour with the liquid mixture, add walnuts.
Spoon batter into prepared muffin-pan cups.
Bake 20 to 22 minutes, until muffins are golden brown, tops spring back when lightly touched or a toothpick inserted in center of muffin comes out clean.
Cool on wire rack, decorate with icing sugar before serving.
