Today the Irish are celebration St. Patrick’s Day. Even I’m not Irish I invited you to participate in St. Patrick’s celebration, too. Just cook/bake/prepare something Green or Irish today.
I never was on the green Isle (but it’s definitively on my to-visit-list). I know only one Irish, he’s living in Switzerland. I didn’t saw him for years, I hope he’s fine. We celebrated great parties together. At the end of these parties, we often asked him to sing some typical Irish songs. And he did. It was quite emotional for him, often he had some tears in his eyes. We did not understand a word, but his singing was beautiful.
I have made something green for the event. It turned out really green!
Braised Hearts of Lettuce with Green Peas
2 hearts of lettuce
1 onion, sliced
parsley, chopped
40 g butter
1 tb butter
1 dl chicken broth
1/2 tb sugar
150 g frozen peas
Half the hearts of lettuce and wash them.
Melt 40 g butter in a frying pan, add chicken broth, sugar and parsley twig, bring to boil. Reduce heat add onion, cover and let cook for 6-8 minutes.
Add hearts of lettuce and peas, cover and let Cook gently for 10-15 minutes.
Remove parsley twigs, season with salt and pepper. Add chopped parsley and 1 tb butter. Let cook uncovered for 2-3 minutes.
