Sig from LivetoEat is the host of this month Monthly Mingle an event created by lovely Meeta. Sig asks us to get out and fire up the grill and get grilling. No problem for me, during summer we’re grilling every second or third day.
Of course I tested a new recipe for this event: Chicken kebabs.
Kebab refers to a variety of meat dishes in Middle Eastern, Mediterranean, African, Central Asian, and South Asian cuisines, consisting of grilled or broiled meats on a skewer or stick and has become part of everyday cuisine in multicultural countries.
Chicken kebabs
makes 2 skewers
1 chicken breast, skinless
about 12 cherry tomatoes
marinade
1 garlic clove, crushed
fresh ginger, grated
1/2 pot of yoghurt, about 75 g
1 ts curry
1 pinch of cinnamon
1 pinch of cayenne pepper
1 ts olive oil
1 tb lemon juice
salt and pepper
Mix all the ingredients for the marinade.
Cut chicken breast into cubes of about 2 cm and marinate for at least 12 hours in the fridge.
Remove chicken from marinade, reserving marinade. Thread chicken alternately with cherry tomatoes onto skewers. Grill kebabs over medium-hot coals 3-5 minutes on each side or until chicken is done, basting frequently with reserved marinade.
