SHF #38 – The proof is in the Pudding! – Blanc Manger

I’m dreaming of a white Christmas
Just like the ones I used to know…

Sometimes I’m really missing snow here at the coast of Andalucia. So I decided to prepare Blanc Manger – a pudding as white as snow – for Sugar High Friday, hosted this month by me.

SHF #38 - The proof is in the Pudding!

The historical Blanc manger originated some time in the Middle Ages and usually consisted of chicken, milk or almond milk, rice and sugar and was considered to be an ideal food for the sick. 17th century, the whitedish evolved into a meatless dessert pudding, and since then it’s no more considered as food for the sick. ;-)

Blanc Manger
makes 6 Fiorini

SHF #38 - The proof is in the Pudding! - Blanc Manger

280 ml milk
50 g ground almond powder
2 tsp sugar
4-8 drops bitter almond essence
3 gelatine sheets
1 dl whipped cream

Raspberry Sauce
100 g frozen raspberries, thawed
1 teaspoon powdered sugar

Make the almond milk by bringing milk and almond powder to boil. Once boils, reduce heat and let simmer for 30 minutes. Using a very fine strainer, drain almond milk. Now you should have 250 ml almond milk, add sugar and bitter almond essence. Bring to another boil, remove from heat and add prepared* gelatin sheets. Stir well. Drain again and chill until thickened a little about 30 minutes. Gently stir the whipped cream into the almond milk. Pour into 6 small molds and refrigerate for at least 3 hours.

To unmold, dip the molds into a bowl of very hot water.

*Put the gelatin sheets in a bowl of cold water and let soak for 10 minutes. Remove for water and gently dry.

Raspberry Sauce: Puree all in blender. Serve over Blanc Manger. If you prefer a seedless sauce just strain it.
