Some days ago I bought the first rabbit of my life. I never have eaten rabbit before. When buying it my objective was to grill it. It was quite difficult to find an adequate recipe. It seems rabbit is not really suitable for grilling. Finally I found a recipe, and it was delicious, perhaps not so good as a stew, but ok.
Lapin grillé auvergnat
1 rabbit, halved lengthwise
60 g butter, melted
8 sprigs of rosemary, about 6 cm long
1 ts black pepper, crushed
sea salt
fresh lemon juice
Butter a thick aluminum foil. If you don’t have a thick aluminum foil just take 2.
Arrange half of the sprigs of rosemary on the aluminum foil.
Butter halves of rabbit, season with salt and pepper.
Place the rabbit on sprigs of rosemary.
Arrange rest of the sprigs of rosemary on top.
Close the aluminum foil to a package.
Grill over char for about 40 minutes, turning the package from time to time.
Open the package at the table and sprinkle lemon juice on halves of rabbit.

Der sieht nach 40 Minuten in der Folie über Holzkohle nun mal so aus. ;-)
Ichh ab auch noch einen im Tiefkühler aber noch kein passendes Rezept gefunden, vielleicht sollt ich das ausprobieren.

Your Rabbit entry in WHB is great. Here in Australia rabbits are a pest, but do you think they are easy to get hold of, no. If I get lucky to get them in I will try this recipe. Thankyou. I’ve been on vacation so I’m barely reading some of the entries from last week! When I was a kid we used to raise rabbits and the meat was delicious. Sounds good with rosemary.
