WHB #91: Penne with Courgette & Bread crumbs and a little quiz

Susan from FoodBlogga is hosting this week’s Weekend Herb Blogging.

For this WHB I used again courgettes. No, I have none in my garden, I had the years before, but they did not grow properly. They were always affected by mildew. :-(


Fortunately I have less problems with herbs, they bloom in their glory.

WHB #91: little quiz

Penne with Courgette and Bread crumbs
serves 1

WHB #91: Penne with Courgette & Bread crumbs and a little quiz

100 g Penne
1 small courgette
1/2 onion, sliced
2-3 tb olive oil
1 garlic clove, chopped
2 tb bread crumbs
3 tb Parmesan
fresh parsley, chopped
pepper and salt

In a pan add 1 tb olive oil and garlic and heat over medium flame. Add bread crumbs, they will fry and begin to toast, but watch out because they can burn. Set aside, let cool and add Parmesan.

In the same pan add 2 tb olive oil and the courgette cut into rounds and fry. After 5 minutes add the onion. Season with salt and pepper.

In the meantime cook the Penne in plenty of salted water, drain when „al dente“, then pour into the pan with the courgette (courgette should be brown and tender). Add bread crumbs/Parmesan mixture and chopped parsley to the sauce.

An extremely simple but tasty dish!

    I am going to guess something different, just for fun: cilantro.

  4. The herb certainly looks like dill – at least, it looks exactly like my dill, just coming into flower.
    The pasta and courgette looks yummy – mine are going to be big enough to eat in another few days…. I’m so excited! And that is really sad… (being excited about vegetables, that is)
