Finally, today is World Bread Day! As a so called „bread baking freak“ I was wistfully awaiting this day. During the last days weeks I was baking like a maniac. With all the baked loafs I could open a bakery. I’m exaggerating just a little bit. ;-)

Today I have a wide range of tested bread recipes, so it’s hard to decide which one should be my World Bread Day-Bread. As I need to make a decision: Tahini Bread is it.

Since weeks a glass of tahini is standing around in the kitchen. So the brilliant idea to bake a bread with tahini came to me. Google – my friend – spit out some recipes. Inspired by the recipes of Yogurtland and Binnur’s Turkish Cookbook I made my very own Tahini Bread. Perhaps not authentic but delicious!

Tahini Bread

makes 5 buns

Tahini Bread for World Bread Day

250 g flour
1 tb sugar
5 g salt
30 g mild olive oil
150 g lukewarm milk
7 g fresh yeast

filling
Tahini
brown sugar
olive oil for rolling out and brushing

In a bowl, melt the yeast with sugar and milk. Add flour, oil and salt, knead well.
I use my Bosch MUM 8 also for small quantity of dough.

Cover and let rise for 90 minutes.

Cut the dough in 5 equal pieces. Roll out each piece on an oiled surface until they are thin and a round shape (doesn’t have to be perfectly round). Brush with olive oil. Spread the filling with a spoon on the dough. Drizzle with sugar (quantity is up to you). Roll them up and let them sit for 15 minutes at room temperature. Then hold with each hand the ends of the roll and swing them in circles to get it longer and thinner. Then wrap them up.

How to steps - Tahini Bread for World Bread Day

If you want flat breads just push them down with your palm. I forgot this, so mine are not flat.
Let them sit another 30 minutes. Preheat oven to 200C.

Before baking brush them with olive oil and put some sesame seeds for decoration.

Bake in the middle of oven for 20-25 minutes.

  1. Die sehen ja wunderhübsch aus! Ich wäre nie auf die Idee gekommen, Tahini in einem süßen Brot zu verwenden. Muss ich direkt mal versuchen, ich habe ja noch selbst hergestelltes, was sehr lecker ist. Danke auch für die ausführliche und anschauliche Anleitung!

  3. Wow, wow, wow! I never would have though of putting tahini as a filling in a bun, but these are amazing. I love the slideshow too.

  4. Zorra that is beautiful. The slide show is perfect! Very much want to try this one. Is the roll soft inside and a little crisp on the outside? It looks like it might be.

    Acutally the buns are soft and just a little bit crispy outside. If you want them crispy perhaps you should bake them longer.

    Bei mir reichen Zeit und Energie zur Zeit höchstens dazu aus, ein Gipfäli zu kaufen und zu essen. Ob ich es noch schaffen würde, zwischen diesen zwei Ereignissen ein Foto davon zu machen, ist fraglich.

    zunächst einmal vielen Dank für die Mühe, die Du Dir mit dem Event machst. Ich finde das ganz toll! Und diese Idee mit dem Tahini – einmalig. Bei mir steht nämlich auch seit Monaten ein Glas mit eben diesem Lebensmittel im Kühlschrank. Endlich weiß ich, was ich damit anfangen werde. Bin begeistert! Die Dinger sehen ja so verführerisch aus!

  8. Tahini ist neu für mich. Danke auch für die kleinverbraucherrfreundliche Menge. 250g ist bei mir bei Brötchen oder Baguettes eine Art Standard.

    als jemand der doch bestimmt mehr als die anderen Kommentatoren tahini-brot gegessen habe, kann ich wohl zu recht sagen, dass brötchen dir sehr gut gelungen sind!

  10. Zorra, you come up with the most original ideas — I love this! I, too, have some tahini sitting at the back of my cupboard and now I have an inspiration for what to do with it in a new way! I’m glad you put in the video because I would not have done the „swinging the bread“ part correctly without it. : – )
