WHB #87: Marinated Feta

I love feta cheese, marinated even more. You can make it easily yourself, so you can add only ingredients you like.

WHB #87: Marinated Feta

Again I used rosemary but also some other fresh herbs. As I had some bad experience with fresh herbs in oil – they began to mold – I did let them simmer for some minutes in olive oil, before filling. Hopefully it helps. I will let you know.

Marinated feta

WHB #87: Marinated Feta

feta cheese, cubed
fresh rosemary, chopped
fresh thyme, chopped
fresh oregano, chopped
garlic, sliced into slivers (or less depending on taste)
dried tomatoes, chopped
black peppercorns, crushed
good olive oil

Let simmer fresh herbs and garlic in olive oil for about 5 minutes. Let cool. Place all ingredient in a preserving jar. Cover with oil, seal bowl and refrigerate for at least 2 days before open it. Serve on french bread, lightly toasted, with olives, fresh sliced veggies, red wine, etc.
