Last week I used rosemary from my own garden, this week I use even two herbs: parsley and chives. These herbs are „everyday“ herbs, but delicious ones, aren’t they?
My lemon trees supply lemons on a regular basis. So I could prepare this delicious Lemon-Potatoes with Parsley and Chives.
Lemon-Potatoes with Parsley and Chives
makes 2 as a side-dish
300-400 g potatoes
lemon zest of 1/2 lemon
2 tb lemon juice
10 g butter
salt
pepper
parsley
chives
Peel and quarter potatoes lengthwise. Boil potatoes in salted boiling water for 15 to 20 minutes or until tender. Melt butter in saucepan over medium heat. Add lemon zest, juice and warm potatoes. Then add chopped parsley and chives, salt and pepper.
I served with a fish/shrimps ragout. Delicious!

Simple and refreshing, I don´t think I ever used lemon juice to dress potatoes…a really good idea.
I agree, it was fun to see Scott’s face. This sounds like a wonderful way to fix potatoes. I love lemon in everything, and the herbs are a nice bonus!
