A while ago Chris from mele cotte wanted to know how I make my tomato sauce.

It’s a super easy recipe. In summer I use fresh tomatoes. When tomatoes have no taste (like now), I make it with canned tomatoes and variegate with herbs.

For WHB#76, hosted by Kalyn, I added fresh oregano.

WHB#76: Oregano

The warm, balsamic and aromatic flavor of oregano makes it the perfect addition to Mediterranean cuisines. It has been recognized for its aromatic properties since ancient times, with the Greeks and Romans holding oregano as a symbol of joy and happiness.

Super easy tomato sauce

1 ts olive oil
1 onion, chopped
1 garlic clove, chopped
1 can tomatoes (400g)
1 tb tomato paste
1 ts sugar
1 ts fresh oregano leaves, chopped
black pepper

Heat oil in a pan over medium heat; add onion and cook, stirring often, until softened, add garlic and let cook for 1-2 minutes more.
Stir in tomato sauce, tomato paste, black pepper and half of oregano. Simmer, uncovered, for 30 minutes. Season with rest of oregano and salt.

This sauce seasoned with oregano goes well as pizza sauce.
