Yesterday we could celebrate Onion Day for the second time. As host of the event I had to participate of course. ;-)
I prepared a simple but tasty onion sauce served and served it with Spaghetti.
By slicing the onion I was crying. And you did you follow one of these secrets?
For the sauce the onions need to cook up to one hour until tender. I did this in my Hotpan. The Hotpan is very practical. All you need to do is to heat your dish briefly, place the Hotpan in its insulating bowl and the Hotpan will take care of the rest of the cooking. The food stays hot in the Hotpan for up to two hours. It’s a very healthy cooking method and you can save up to 60 % energy.
Spaghetti with Onion Sauce
serves 1
1 big onion, sliced & separated into rings
olive oil and ghee
salt, pepper
4-5 tb white wine
parsley, chopped
Parmesan, grated
100 g Spaghetti
I sautéed the onion rings with a little salt in ghee and olive oil just for a few minutes, then I closed the Hotpan and let it stand for 5 minutes on low temperature then I placed it for the rest of the time (about 50 minutes) in its insulating bowl.
Once the onion rings were tender I placed the Hotpan back to the stove. Let evaporate all liquid added white wine and let evaporate again. Seasoned with salt and pepper. At the end the onions should have a nice golden tan.
Then I cooked the Spaghetti in plenty of salted water, drained them when „al dente“.
I mixed Spaghetti, parmesan, parsley and sauce and served it immediately.
Erst als ich heute morgen überall nur Gerichte mit Zwiebeln sah, da dämmerte es mir! Ich habe den Zwiebeltag total verschlafen………Auch wenn Robert lieb meinte, in der Terrine seien Schalotten….

Hmmm I have all the ingredients, I think I’ll give it a try.
I absolutely love onions and pasta; yet I have never thought to make a pasta sauce out of onions before!! looks delicious!!
Help, this looks really tasty, but what is „Ghee“? :-)
