Jenni from The Gingered Whisk is hostess of Bread Baking Day #56. She challenges us to bake a bread and make it beautiful worthy for a bread fashion show.

I am no fashion designer and also not so into fashion, but I am into baking bread as you know. I can make loaves with perfect crumb and crust but decoration…. well I tried.

BBD # 56 - Bread with a Braid for Bread Fashion Show

Not so bad?! No Haute Couture – I know – more everyday fashion. But as you can see below the crumb is perfect, so is its taste and it is easy to shape, too.

The recipe I used is a variation of my bread project recipe. I just added some seeds into the dough and also sprinkled some over the braid.

Bread with a Braid for Bread Fashion Show

The braid on top makes this loaf fashionable!

Ingredients

    Preferment

  • 100 g flour
  • 50 g whole wheat flour
  • 2 g g fresh yeast
  • 2 g salt
  • 100 g water
  • final dough

  • 300 g flour
  • 50 g whole wheat flour
  • 220 g water
  • 80 g sunflower seeds
  • 10 g flax seeds
  • 10 g sesame seeds
  • 8 g salt
  • 7 g fresh yeast
  • preferment from above

Instruction

  1. Preferment: Mix all ingredients together, knead and let rise for 2 hours at room temperature then put in fridge overnight (12 to 24 hours). Before using let preferment get back to room temperature. Or if your room temperature is about 16 C just let it rise at room temperature until next morning.
  2. Final dough: Mix yeast and flour. Add all ingredients except salt and knead on speed 1 for 4 minutes. Add salt and mix another 6 minutes on speed 2. Cover and let rise for 60 minutes, after 30 Minutes make 1 stretch and fold.
  3. Shape as shown below. Cover and let rise 75-90 minutes.
  4. Preheat oven and baking tray to 230 C. Bake loaf for 15 minutes, open oven door quickly to release steam, reduce heat to 200 C and bake another 15-20 minutes. Remove loaf from oven and let cool on a wire rack.
